For some quests it would be cool to have different skills give bonuses, like extra objectives for an additional gold/XP rewards.
For example:
Rodran quests featuring bonus objectives that require more thievery like hide, move silently, pickpocket, open lock and disarm trap
Hagar and Gulwyn quests giving more GP/XP if you harvested creature parts more efficiently using Lore
The best horse in Skara Brae has gotten loose and needs to be returned, you will need Animal Handling or and/or Ride to get it back safely
Bluff, Intimidate and Persuade being usable to achieve peaceful resolutions for quests by the mayor and Grum
Gleanna's quests having more favourable outcomes with good Spellcraft checks
A merchant needs a second opinion on an item requiring appraise (then you hunt down the swindler)
The Dwarven citadel is dealing with an outbreak of disease, requiring some good Heal to treat everybody effectively
Just a thought, would break up some of the kill & fetch pattern.

I have something planned that will have some of this stuff in it. It probably won't be implemented until December/Jan though.
